In 2014 I travelled to Tahiti and adored the fresh vanilla bean, limes and Mahi Mahi (dolphin fish). This is my take on a delicious dish I found often served there.
INGREDIENTS
Makes 2
SAUCE
Juice of 1/2 Lime
1/8 Tsp Salt
1/4 Tsp Vanilla Bean Paste
3 Tbsp Mayonnaise
BURGERS
1/2 Cucumber
1 Tomato
4 Leaves of Butter Lettuce
1/4 Red Onion
2 Fillets of Firm White Fish (I recommend Aquna Murray Cod)
2 Brioche or Milk Burger Buns
2 slices of Jack Cheese
1 Tbsp Cooking Oil
METHOD
1. Mix all sauce ingredients in a small bowl and set aside.
2. Thinly slice the onion, tomato and cucumber.
3. Cut the bread buns in half and place them inside-down in a nonstick pan on medium-high heat, for 1 minute or until golden. Remove and set aside.
4. Season the fish with salt and pepper.
5. Heat the oil a nonstick pan on medium-high heat and then grill the fish fillets for appx 4 mins each side. If the fillets have skin on, then peel it off with tongs after grilling.
