SPICED APPLE OVERNIGHT OATS

This breakfast is a win on every level – easy to make, portable, instantly ready in the morning, healthy, and most importantly – tastes wonderful. Don’t miss the bonus recipe for the perfect pumpkin spice mix at the bottom of the page. 

INGREDIENTS

Makes 1 serve, 275 Calories.

  • 1/2 cup oats 
  • 1/3 cup light greek yoghurt 
  • 1/3 cup unsweetened almond milk 
  • 1/2 teaspoon vanilla bean paste 
  • 1 tablespoon apple puree 
  • 1/2 apple 
  • 1/4 teaspoon pumpkin spice* + more for topping 
*pumpkin spice recipe is at the bottom of this page, or, substitute cinnamon

METHOD

1. In a bowl [or directly in the serving cup if you don’t mind a messy looking result], mix all the ingredients except the half apple.

2. Chop the apple into bite sized pieces and stir into the oat mixture. 
3. If using a mixing bowl, transfer into a glass. 
4. Top with a few shakes of the pumpkin spice [or cinnamon], cover and store in the fridge overnight, or up to three nights.  
5. Serve straight from the fridge for an instant, healthy, filling and completely delicious breakfast!

PUMPKIN SPICE RECIPE

Makes 1 shaker

INGREDIENTS

  • 3 Tablespoons Cinnamon
  • 2 Teaspoons Powdered Ginger 
  • 1 Teaspoon All Spice 
  • 1 Teaspoon Nutmeg 
  • 1 Teaspoon Ground Cloves 
Thoroughly combine all ingredients and store in an airtight container spice shaker.
