These are healthy, delicious, easy and filling. The vanilla and spices give it a Christmas morning feel. I wrap and freeze the individual bars for breakfast in the morning; 1.5-2 microwave and they’ll be perfect. They also make for a nice snack or dessert. 

Makes 8. 258 Calories per serve.

INGREDIENTS

  • 125g apple puree 
  • 1 mashed ripe banana
  • 2 tablespoons canola oil 
  • 2 eggs 
  • 1 cup greek yoghurt 
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla bean paste 
  • 1 cup wholemeal flour  
  • 1.5 cups rolled oats 
  • 1 teaspoon cinnamon 
  • 1 teaspoon all spice 
  • 1/4 teaspoon baking soda 
  • 1 teaspoon baking powder 
  • Pinch salt

METHOD

1. Preheat a conventional oven to 180C. 
2. Line an approximately 28 x 18cm baking dish with baking paper.
3. In a medium-large bowl, whisk the banana, apple puree, eggs, sugar, vanilla, oil and yoghurt.

4. Combine the flour, salt, baking powder, baking soda, cinnamon, all spice and oats.
5. Using a rubber spatula, fold the dry mix and the wet mixture together. 
6. Tip the mixture into the lined baking dish and put into the oven. 
7. Bake for 30 minutes in the middle of the oven. 
8. Remove from the oven and leave to completely cool on a rack. 
9. After cooled, cut into 8 even pieces and enjoy. They can be individually wrapped and kept in the freezer.
